Our History

Ricardelle de Lautrec, pioneer of organic wine in Pays d'Oc The Ricardelle de Lautrec estate has been producing organic wines since 1999 and now offers a range of natural wines, without added sulphites.

 

The Ricardelle de Lautrec estate is located in the commune of Coursan in the Aude department, at the crossroads of the Clape, Minervois and Corbières terroirs. Here, history has left its mark: the Via Domitia, the ancient Roman road that linked Rome to Spain, runs along our 40 hectares of vines.
Closer to home, this vineyard belonged to the Toulouse-Lautrec family. The name of the estate, as well as its cellars dating from the 19th century, bear witness to this heritage. 
Today, Cathy and Lionel Boutié continue the work begun more than four generations ago by following the rules of Biodynamic Agriculture.

Family know-how

The vinification is undoubtedly the most delicate stage but also the one where Lionel can give free rein to his creativity.
Applying the know-how handed down by his ancestors and experimenting with other more contemporary processes, he seeks to sublimate his product.
First, the grapes are harvested when they are ripe to ensure the best balance between sugar and acidity. Then, the indigenous yeasts will be used: the whites will be vinified cold to preserve their aromas, the reds will undergo a longer fermentation.
Aim for the fruitiness, the aroma, the roundness of a wine. Do not restrict it, let it express its spontaneity, to obtain a product with character, a unique product.

Today, Lionel Boutié, perpetuates this work of four generations and made the choice since 1999 to lead his vines according to the rules of Organic Agriculture.

Sulphur or no added sulphur?

Sulphur

Sulphur is present in organic wines. The authorised level is very low, but it is more than sufficient for the preservation of wines, without harming the health of the consumer. It is an antiseptic and an antioxidant.

Wines without sulphur

Wine naturally produces sulphur in very small quantities to protect itself. This is a "no added sulphur" wine in which nothing has been added.
A good technical mastery is required to make these wines. The choice of grape varieties is very important. These are wines that reveal all their aromatic power.
The absence of added sulphites does not alter the palate and nose of these wines, so they are naturally rich in aroma and taste.
