The Romans, and the Greeks before them, had already understood the advantages of such a terroir in ancient times. The clay-limestone and gravelly soils are built and enlivened by the influence of the Mediterranean.
This exceptionally sunny climate, harsh in winter, hot and dry in summer, cradled by sea breezes and a very present cers, allows the vines to dry out and prevent them from diseases.
In this environment, which is favourable to the cultivation of vines, we find our different grape varieties: Merlot, Syrah, Cabernet Sauvignon, Caladoc and Pinot noir for the reds and rosés... Chardonnay, Viognier, Sauvignon blanc and Muscat à petits grains for the whites.
Which grape variety for which aromas?
Here is a glossary of the grape varieties we grow, to help you find your way around according to your tastes.
Very susceptible to disease. Chardonnay has powerful and complex aromas ranging from fresh fruit to dried fruit and even floral. The barrel contributes greatly to the fat, buttery aromas.
The driest of our whites, it has aromas of broom, fennel and citrus. Perfect for your fish and shellfish!
Produces fine wines of great quality. Fat and unctuous, with floral notes. Sensitive to oxidation, it should be drunk young.
It is the oldest grape variety that comes to us from Greece and borders the entire Mediterranean. Good sugar content and good balance with acidity. Perfect for sweet wines, aromatic explosion, musky smell.
